SNICKERS Ice Cream Bites


Keep a batch of these Snickers mini ice cream bites in the freezer for summer treat that’s hard to beat.

Prep Time: 10 minutes

Total Time: 10 minutes (+ 2 hours freezing time)

Makes: 12

Ingredients:

1 (6 oz) Snickers Ice Cream Cup

1/2 cup peanuts, finely chopped

1 oz chocolate, melted

2 tbsp caramel sauce

Instructions:

Using 1/2 tbsp measuring spoon, scoop 12 ice cream balls onto parchment paper–lined tray. Freeze for about 1 hour or until firm.

Roll each ice cream ball in chopped peanuts to coat. Drizzle with chocolate and caramel sauce. Freeze for about 2 hours or until firm. Keep frozen until ready to serve.

Tip: Change it up – roll the ice cream balls in chocolate cookie crumbs or peanut butter cookie crumbs.

SNICKERS Ice Cream Brownie Bombes


Snickers ice cream is encased in brownies for an outrageous bite that is sure to please any crowd.

Prep Time: 25 minutes

Cook Time: 30 minutes

Total Time: 55 minutes (+ 2 hours freezing time)

Makes: 10

Ingredients:

1 pkg (18.3 oz) brownie mix

2 Snickers Ice Cream Bars

3 oz dark chocolate, melted

2 tbsp caramel sauce

2 tbsp peanuts, finely chopped

Instructions:

Prepare brownies according to package directions; bake in 11- x 7-inch baking dish lined with enough parchment paper to leave 1-inch overhang on long sides. Let cool completely.

Using 1 1/2-inch round cookie cutter, cut out 10 rounds from brownies; set aside. Using 1-inch round cookie cutter, cut out 10 rounds of brownies; set aside. (Reserve remaining brownies for another use.)

Line 10 mini muffin cups with plastic wrap or paper liners. Press 1 1/2-inch brownie rounds into prepared cups, pressing into bottom and up sides of cups.

Cut each Snickers Ice Cream Bar into 5 pieces; place 1 piece in each brownie cup. Cap with smaller brownie rounds, pressing to flatten and enclose ice cream. Freeze for 2 to 3 hours or until firm.

Remove bombes from muffin cups; transfer to parchment paper–lined tray. Dip each bombe into melted chocolate to coat top and sides. Return to tray; freeze for 1 hour. Keep frozen until ready to serve.

Just before serving, top each bombe with drizzle of caramel sauce and sprinkle of peanuts.

Tip: Short of time? For speedy prep, use store-bought brownies.

SNICKERS Coconut Macaroons


With shredded coconut and chopped peanuts, these Snickers macaroons are the perfect sweet bite.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Makes: 12

Ingredients:

2 cups shredded unsweetened coconut

1/2 cup sweetened condensed milk

1/4 cup chopped peanuts

1/2 tsp vanilla extract

1 regular (1.86 oz) Snickers Original, chopped

1 egg white, at room temperature

Pinch salt

Pinch cream of tartar

2 oz dark chocolate, melted

Instructions:

Preheat oven to 325°F. In large bowl, toss together coconut, sweetened condensed milk, peanuts and vanilla. Fold in Snickers; set aside.

In separate bowl, beat together egg white, salt and cream of tartar on low speed until starting to foam. Increase speed to high. Beat until stiff peaks start to form; fold into coconut mixture.

Drop batter into 12 mounds onto parchment paper–lined baking sheet. Bake for 15 to 20 minutes or until golden brown; let cool completely on baking sheet.

Place melted chocolate in shallow bowl. Dip bottoms of cookies into melted chocolate, letting excess drip back into bowl. Return to parchment paper–lined baking sheet. Let stand until chocolate is set.

Tips:

• Use milk chocolate for dipping if desired.

• Alternatively, drizzle chocolate over top of macaroons; garnish with a sprinkle of finely chopped Snickers.
