Also known as fro-yo, the frozen treat is usually lower in fat than traditional ice cream and has a tart flavor. It is made by freezing yogurt blended into an ice cream base with enough sugar to prevent it from turning icy. Frozen yogurt first gained popularity in the 1970s, though it was criticized as being too sour. Eventually companies like TCBY created formulas that were lighter and sweeter in flavor. Frozen yogurt fell out of favor in the early 2000s, but experienced a resurgence thanks to companies like Pinkberry and 16 Handles.

ULTIMATE Ice Cream Terminology : Float

The ice cream float — also known as a coke float, soda float, root beer float, or, in Australia and New Zealand, a "spider" — was invented by Robert McCay Green in Philadelphia, PA, in 1874. Some sources say he ran out of ice for his drinks and opted to use vanilla ice cream instead. According to Sundae Best: A History of Soda Fountains, Green was making cream sodas when he ran out of cream. He dashed to a nearby ice cream shop and filled his pitchers with ice cream, planning to use it in the drinks after it melted But with demand from customers rising he started making the drinks with scoops of frozen ice cream. Floats were popular at soda fountains and during Prohibition; they remain on menus at ice cream shops throughout the U.S.

ULTIMATE Ice Cream Terminology : Eskimo Pie

A vanilla ice cream bar covered in chocolate. It was invented in 1919 in Iowa but perfected by the Burt family of Youngstown, Ohio in 1920 when they added a handy stick to the bar. That allowed ice cream fans to eat it without getting a mess on their hands, and the creation was renamed a Good Humor Bar. The Klondike Bar is the brand name of the Eskimo pie.

Homemade Vs. Store-bought: Ice Cream


Here is what you'll need!

3-INGREDIENT CHOCOLATE ICE CREAM
Servings: 6

INGREDIENTS
1 pint heavy whipping cream
1 (14-ounce) can sweetened condensed milk, cold
10 ounces bittersweet chocolate, melted

PREPARATION
1. Place a large glass or stainless steel mixing bowl in the freezer for at least 15 minutes. 
2. In a small microwave-safe bowl, combine chocolate and sweetened condensed milk.
3. Microwave 30 seconds at a time, stirring after each, until melted. 4. Set aside to cool slightly. 
5. Remove the mixing bowl from the freezer and add the heavy whipping cream. 
6. Beat with an electric mixer until the cream begins to form firm peaks. 
7. Fold a large spoonful of the whipped cream into the chocolate mixture to thin it out. 
8. Fold the chocolate mixture back into the whipped cream mixture until just combined, being careful not to over-mix, which will deflate the whipped cream. 
9. Pour into a loaf pan or 9x9-inch baking pan. Cover and freeze until firm, about 4 hours. 
10. Enjoy!

HOMEMADE CHOCOLATE ICE CREAM
Servings: 1.5 quarts

INGREDIENTS
2 cups heavy whipping cream
1½ cups whole milk
¾ cup sugar, divided
¼ cup cocoa powder
¼ teaspoon salt
7 egg yolks
10 ounces bittersweet chocolate, melted and cooled slightly

Ice cream maker

PREPARATION
1. In a medium saucepan over medium heat, add the heavy whipping cream, whole milk, ½ cup of sugar, cocoa powder, and salt. Heat the mixture, stirring occasionally, until the sugar has dissolved and the mixture is hot and steaming (but not quite at a simmer). The temperature should read between 175-180˚F (80-82˚C). Remove from heat. 
2. While the milk mixture is heating, whisk together the remaining ¼ cup of sugar with the egg yolks in a small mixing bowl. Whisk in the melted chocolate until smooth. 
3. Add about 1 cup of the hot milk mixture to the eggs and chocolate, and whisk until smooth. 
4. Pour the egg mixture back into the saucepan and return to heat. 5. Cook over low-medium heat for 5-10 minutes, stirring constantly, until the mixture has thickened and begins to steam, or until the mixture reaches 175-180˚F (80-82˚C) on an instant-read thermometer. To prevent cooking the eggs, do not let the mixture boil. 
6. Remove from heat and pour the mixture through a fine-mesh sieve into a large mixing bowl. Stir in the vanilla.
7. Allow the custard to cool slightly before covering with plastic wrap and chilling in the refrigerator for at least 4 hours, preferably overnight. 
8. Once the custard has cooled, transfer to an ice cream maker and follow the manufacturer's directions for use. 
9. Serve immediately or transfer the finished custard to a loaf pan or a 9x9-inch baking pan. Cover and freeze until firm. 
10. Enjoy!

Julz Ice Cream and Candies, formerly known as Naidu’s Ice cream has been a family-owned business in West Sacramento for the past 30+ years. We are a wholesale Novelty warehouse specializing in brand names like Blue Bunny, Good Humor, Its It, Wonder, Ben & Jerry’s, M & M Mars, Delicias, and Rich’s to name a few. We serve the local ice cream truck vendors, mini marts, schools, churches, company picnics, and the general public in any event that needs ice cream. 

My father, Mr. Naidu, started as an ice cream vendor on the streets of Dixon, California, 30 years ago. We all grew up selling ice cream on the streets of Dixon. As soon as we got our driver’s license, our father gave us an ice cream truck to teach us responsibility and the value of a hard-earned dollar. Even until this day, we are known as THE ICE CREAM family in Dixon. I remember throwing candies out from the trucks at the Dixon Mayfair Parade. Good times!

Today our pride and joy is this wholesale novelty warehouse, which is operated by my husband, Ravi, my two sons, Shivam and Avineet, and me, Julz.

ULTIMATE Ice Cream Terminology : Dippin’ Dots

A treat billed as the "ice cream of the future" when it was invented by Curt Jones, a Southern Illinois University Carbondale graduate, in 1987. The process involves flash freezing an ice cream base using liquid nitrogen. The process results in small pearls of ice cream that melt on the tongue. Because it must be stored at -40F, the product is not available commercially and is instead sold by franchisees.

How Traditional Italian Gelato Is Made | Regional Eats


In the small Italian town of Ruvo di Puglia, siblings Giuliana and Vincenzo Paparella carry on a 180-year-old family tradition making gelato from only three ingredients: milk, sugar, and eggs. It all started in 1840 when Uncle Luigi brought the art of gelato making from the royal courts of Naples to his hometown, Ruvo, and gave it a home. Fast-forward four generations, and the original 1840 recipe, the King's Cream, has been joined by seven other flavors: pistachio, almond, chocolate, quince, nougat, gianduia, and hazelnut. Behind each and every one of them, the two siblings will transform every ingredient but sugar, from crushing cocoa beans to sourcing vanilla pods from Mexico. ULTIMATE Ice Cream Terminology : Cone


A cookie-like wafer shaped into a cone (sometimes the same dough or cookie is molded into a cup or another shape). Cones enable ice cream eaters to consume the treat out of hand and without a spoon. According to several sources, the first ice cream cone was created by Ernest Hamwi for the St. Louis World's Fair in 1904.

Traditionally, it’s made from a cookie dough or batter which is pressed into a round, waffle-patterned sheet that is then rolled into a cone while warm. Today, there are several different styles, including waffle cones, made from a batter; sugar cones, made from a sweet dough; and wafer cones, made from a starch mixture that is molded and baked into crispy but light cone shapes. Double cones have two openings at the top of the cone to allow for two scoops of ice cream to be placed side-by-side. (The single cone is also known as a "poke" in Northern Ireland and Scotland.)
