Why Does Ice Cream Taste So Good? Here's the Cool Science Behind It


Ice cream may be one of the world's happiest foods.

But there's actually some interesting science behind why we enjoy it so much.

Traditional ice cream is generally made from a mixture that includes dairy ingredients, sugar and flavorings. That mixture is then frozen while being churned.

And that churning process is important.

As ice cream freezes, ice crystals begin forming. Churning helps break up those crystals and incorporates air into the mixture, creating the smooth, creamy texture people associate with ice cream.

Temperature matters, too.

Ice cream is usually served very cold, which affects both its texture and how quickly flavors reach your taste buds. Let it soften slightly and you'll often notice more flavor and aroma.

Then there's the endless variety.

Vanilla may be classic, but ice cream has become a playground for creativity. Chocolate, strawberry, cookies and cream, mint, caramel, coffee, pistachio and countless other flavors have found their way into freezers and ice cream shops.

And toppings?

That's where things can get completely out of hand—in the best possible way.

At some point, you're no longer simply eating ice cream. You're engineering a dessert.

One of the best things about ice cream is that it doesn't require a special occasion.

Great day? Also ice cream.

Some foods need an explanation.

Ice cream really doesn't.
