A treat billed as the "ice cream of the future" when it was invented by Curt Jones, a Southern Illinois University Carbondale graduate, in 1987. The process involves flash freezing an ice cream base using liquid nitrogen. The process results in small pearls of ice cream that melt on the tongue. Because it must be stored at -40F, the product is not available commercially and is instead sold by franchisees.
